Dried oyster porridge is a popular delicacy in Xiamen, and since Xiamen's Wotou waters are rich in pearl oysters, the dried oyster porridge is also sometimes called Wotou dried oyster porridge by local residents. In addition to dried oyster and rice, the porridge also contains fresh pig bones, an old hen and carrots.
