Zhangye preserved mutton

Preserved mutton is a famous meat delicacy in Zhangye. It is made from sheep living in mountainous areas; they are known for their tasty flavor. When winter comes, the sheep are cooked with salt, spice and fresh ginger. The mutton has a red color from the fat, but it is not greasy.
