Chicken cooked with dough rolls is a representative dish of Zhangye, chewy with a rich flavor. The 18-year old Miao’s is the most famous restaurant famous for this dish in Zhangye.
To cook this dish you should cut the chicken into small pieces, add fresh ginger, green onions and chili and fry them until the onions soften[TC1] . Then, knead the dough and cut it into big lumps. Roll the dough into a pancake shape, brush it with oil and then sprinkle it with chopped green onion. Roll it into a cylinder and cut it into 1 cm-long rolls. Put the chicken in the pot and stew it until 80 percent cooked, then cover the rolls over the chicken and allow them to stew till well done. When it is well done, add the shredded green pepper and onion, and now it is ready to be served.
