Mutton minced noodles （羊肉臊子面/Yang Rou Sao Zi Mian）

Mutton minced noodles is a famous traditional wheaten dish in Ningxia. Mutton minced noodles restaurants can be found everywhere in the streets and alleys of Yinchuan. It is said to have evolved from “longevity noodles” in the early Tang Dynasty (618-907), which became the special food for the birthdays of the elderly and children, as well as other festivals. It is mainly made with mutton, chili oil, fresh vegetables, tofu and various spices.
