With carp as its main ingredients, this dish has a unique shape and is very delicious. The fish is made into the shape of a lion's head, hence the name.
The dish dates back to the early period of the Republic of China (1912-49) and was invented by a well-known chef named Yuan Qingfang in Shijiazhuang, Hebei province.
The dish was highly praised by participants and spectators at a cooking skills exhibition match among the province's eight cities held in 1952. In September 2018, it was rated as one of the top 10 classic famous dishes of Hebei by the Chinese Cuisine Association.
