Sanbei chicken is a traditional local dish with national fame. The dish has a mixed sweet and salty flavor, and the chicken is tender and chewy.
Sanbei in Chinese means “three cups” as the dish is cooked not with water but with three small cups, one each of rice wine, lard and soy sauce.
The dish originated in Jiangxi and later spread to Taiwan. Now it has developed into a representative dish of Taiwan cuisine.
