The four-color glue pudding is a well-known traditional snack of Wuxi.
To make glue puddings, first, mix Shangbaiyuan rice and Shangbaigeng rice by a ratio of 7:3; wash the rice with fresh water and soak it in the water. Second, grind the mixture of water and rice into watered rice flour; pour the flour into a cloth bag and squeeze the water out with a piece of stone. Third, knead the dough gently and make even balls from it. Last, fill the rice balls with fresh meat, lard with vegetables, or sesame and sweet bean paste, etc. When ready to eat, cook them in boiling water. Four-color glue pudding has a smooth taste, featured with soft and chewy wrappings and dainty fillings.
