This dish has a strong Shanghai flavor and calls for exquisite preparation. The peanut butter needs to be mixed with vinegar in proper proportions and the salt needs to be added at the appropriate time. The cold noodles are often called “cool noodles” in the dialect of various places away from the Yangtze River Delta.
