Blend fresh oysters, sweet potato, starch and egg, then add a tablespoon of soy sauce and fry them in a pan with shallow oil until the oysters turn crispy. The use of chili sauce and Chinese parsley can make the oyster omelet smell intoxicating. Oysters are found in mass quantity in the coastal areas of Xiamen. The local residents are known to accompany this delicious dish with porridge. For breakfast, people in Xiamen are known to eat oyster porridge with deep-fried dough sticks. In some Southeast Asian countries such as Singapore, many venders can be found using their cars to sell oyster porridge during breakfast hours, cooked in the traditional Xiamen method.
