Coconut milk is a wonderful ingredient that provides the soup with true Hainan flavor, and shows the deep connection between Hainan and Southeast Asian Cuisine, specifically Vietnam, which lies just across the water from Hainan's West Coast. 

You might not realize that the tapioca pearls also come from tropical palm trees, this time the Sago Palm. Together with fresh sweet melons and a dash of Coconut Rum (optional but here at Visit Hainan we heartily recommend it) these ingredients come together to make the perfect summer refreshment to enjoy after a long day enjoying the tropical beaches, mountains, and jungle rainforests of Hainan.
